Spicy Black Bean Dip
A simple spicy black bean dip will be a healthy change-up to your get-together. And this recipe is gluten-free and vegan! (Of course dependent on your chips..)
Ingredients:
3 small garlic cloves, peeled
1¾ cup of black beans (about 1 can), rinsed and drained
3 tablespoons water
2 tablespoons extra virgin olive oil
1 tablespoon lime or lemon juice
½ teaspoon cumin
¼ - ½ teaspoon salt and pepper
1/8 teaspoon cayenne (or more if your tastebuds like it)
smoked or regular paprika
Directions:
- Pulse garlic clove in large food processor making sure to scrape down the sides of the bowl.
- Add in all remaining ingredients, pulse until smooth and occasionally stop to scrape down the sides of the bowl to make sure it properly combines the flavors.
- Taste the dip, and adjust salt, pepper, cayenne or paprika as desired.
- Chill until ready to serve with pita, tortilla chips or on a sandwich.
