Itty Bitty Apple Crisps
This recipe is great for people who like the idea of an apple crisp in theory, but wish it had more graham crackers crust. These little bites pack so much flavor and texture, it will be a hit for any Thanksgiving meal! They are even great as little breakfast treats while watching the Macy’s Thanksgiving Day Parade or a football game to gear up for the heavier food later in the day!
Crust:
Vegetable cooking spray
2 cup graham cracker crumbs (I usually put them in my Cuisinart and let it go to town, until it’s almost sand-like)
12 tablespoons butter, melted
1/2 cup powdered sugar
Filling:
4 cups peeled, cored and chopped apples*
1/3 cup sugar
1/4 cup brown sugar
2 1/4 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Topping:
Caramel ice cream topping
Directions:
1. Preheat oven to 350 degrees.
2. Spray cupcake trays with vegetable cooking spray.
3. In a large mixing bowl stir together graham cracker crumbs, powdered sugar and melted butter with a spoon to create a sort of “dough”.
4. Distribute the dough into the cupcake tins evenly, and press down and up the sides to create mini pie crusts.
5. Put in the preheated oven for about five minutes, and then transfer cupcake tray to a rack to cool fully. Do not remove the cups, as you want to give them time to keep their shape.
6. Increase oven temperature to 375 degrees.
7. Chop the apples into little pieces and place in a large mixing bowl.
8. Mix together remaining filling ingredients.
9. Bake in an oven-proof dish for 15 minutes on 375 degrees, until apples are slightly softened
10. Reduce oven to 350 degrees.
11. Scoop a teaspoon or so of the apple mix into the graham cracker cups, that are still in the tins.
12. Bake for 5 minutes at 350 degrees
13. Transfer cupcake tray to cooling rack, and allow to cool completely.
14. Use a thin knife to assist in removing the cups. The best thing to do is lightly wedge the knife in between the tin and the cup and circle it around. It should easily come out.
15. Top with the caramel ice cream topper.
* I mentioned this in my Bye, Bye Ms. American Pie recipe but this is a game changer, I haven’t tried this brand but it’s this principal.
