Candy Corn Bark

I am not a candy corn gal, but I love an excuse to use those pretty candies!  I found this recipe recently and I think that this recipe really spruces up candy corn giving it a nice crunch!  It's an easy recipe to throw in your freezer before bed for a party the next night or even to treat your co-workers to!

Ingredients:

3 cups chocolate chips (I did half semi-sweet and half dark chocolate)
½ cup of Rice Krispies
1 cup candy corn
1 cup white chocolate

Directions:

  1. Line a baking pan (12-inch baking dish) with parchment paper (literally one of the greatest things to ever be invented.. I use it for baking and cooking and buy it in bulk at Costco).
  2. In a microwavable bowl, melt chocolate in microwave (or a double broiler if you have it)  keep a very close eye on it to make sure you don't burn it. I suggest 30 second bursts to make sure you don't wander off.
  3. Once fully melted, mix in Rice Krispies and candy corn (about two-thirds of your cup of candy corn).
  4. Using spatula, spread chocolate mixture onto baking sheet.
  5. Using another microwave safe bowl, melt the white chocolate.  (This one is even more sensitive. I like to use a double broiler because it melts the chocolate slower, but we don't all have one of those in our kitchens, and microwaves work too!)
  6. Once it is fully melted (and before the bark has hardened), sprinkle some of the candy corn on the top and drizzle the white chocolate and top with more candy corn.
  7. Take a knife and swirl the white and dark chocolate again for a dazzling finish!
  8. Place in the fridge until it hardens - it's best to leave it overnight.
  9. Remove from fridge and break apart into uneven pieces!
